Which one should I use?
Your device speaks AirPlay. Use it to reach an Apple TV or an AirPlay 2 TV (Samsung from 2018, LG from 2019, many Roku models). Open Control Center and tap Screen Mirroring.
iPhone and iPad do not speak Chromecast or Miracast, and their browsers cannot capture the screen. For a non-AirPlay TV, mirror from a computer with the MHL Mirroring receiver, or plug an AirPlay device into the TV.

It depends on your devices, not the standard. AirPlay is best from Apple devices to Apple or AirPlay 2 screens; Chromecast is best from Android or Chrome to a Chromecast or Google TV.
No, the three standards cannot reach each other. To mirror across brands from a computer, use the MHL Mirroring receiver in the TV browser and connect with a 6-digit code.
Windows and many Android phones still send Miracast, and many TVs receive it, but Google dropped it from Pixel phones and stock Android.
